Atomiq Condiments is a new San Francisco craft business making intense, seasonal, single variety, small batch artisan vinegar blended with the same single varietal grape must that’s been vacuum reduced at room temperature into an essence.

Atomiq vinegar is made with unique, single varietal red and white wines (and grape must) from wineries and vineyards in the general Bay area watershed. As we grow, we will move into barrel aging and expand the tools we use to craft unique products.

Here in the Bay area we live in a world class wine growing region and we have a few great, albeit large vinegar companies. Mysteriously, no one is making small batch, high quality single varietal wine vinegar with information on the wine’s provenance and vintage.

If fact, there are only a handful of artisans in North America making unique, small batch vinegar from scratch. If you start with a delicious wine, there’s good chance it’ll be a good vinegar.

Wine and wine vinegar are both over 8000 years old and both are woven into the culinary fabric of many cuisines. Good vinegar is a veritable gastronomic pillar with both savory and beverage applications and is an indispensable ingredient in many products in the specialty food world.
