Our core product is making small batches of shelf stable acidic essences of fruit and vegetable flavors with provenance: single ingredient, single flavor, single season, single location, single farms and single wineries
This project breaks new ground in the condiment and beverage worlds by utilizing advances in food processing technology and equipment to remove the water and oxygen from each ingredient and then blending the syrup or powder with a pure acidic fermentation of the same ingredient to create intense, balanced single flavors
We are bringing culinary and laboratory ideas and processes together to enhancing the fruit and re-imagine vinegar by increasing the depth and controlling the pH levels then marketing these new products the way fine varietal wine is presented but, as a unique natural, seasonal product that can be used in a variety of applications
